Fortune Cookies

1 large egg
1/2 cup sugar
2 tbsp corn oil
2 tbsp water
1/4 cup cornstarch

Beat egg lightly and gradually beat in sugar. Continue beating until thick and light colored. Fold in corn oil. Mix water and cornstarch, then stir into egg mixture and beat gently until smooth. Heat electric frying pan to 350 degrees. Drop batter by the tablespoon onto the ungreased griddle. Spread the batter to about 4 inches in diameter and 1/8 inch thick. Cook until lightly golden brown and then turn over and cook. When the cookie is done, quickly remover and put folded message in the center and fold the cookie. Stand cookie on edge of fold.

Teriyaki Sauce

1/4 cup soy sauce
1/4 cup vegetable oil
5 tbsp of apple juice, pineapple juice, orange juice, or water
2 tsp chopped ginger root or 1/2 tsp ground ginger
1 tsp sugar
1 clove of garlic, chopped fine

Soak over night and cook the next day.

Chinese Cabbage

1 tsp salt
1/3 cup soy sauce
2/3 cup water
1 cup and 1/2 tsp sugar
Fresh ginger
1 head of cabbage or romaine lettuce.
1 lb hamburger

Dissolve together. Brown hamburger and simmer with sauce mixture. Add lettuce. Cook 10 to 15 minutes. Don't over cook.

Sweet and Sour Pork

This is my aunt Vivian's recipe:

Carrots
Green Pepper
Celery
Onions
Pork
1 tbsp Cornstarch
1 tbsp flour
1 egg
1 can pineapple chunks

Put rice on to cook. Saute in butter: carrots, green pepper, celery, onions, until they are basically done. Dip pieces of pork in cornstarch, flour, and egg, and fry.

Sauce:
1/3 cup wine vinegar
1/4 to 1/2 cup sugar
1/2 cup water
1 tbsp cornstarch
1/2 cup ketchup
Tomato sauce to taste

Place veggies on rice. Place chunks of pineapple and pork on veggies. Cover with sauce.

Chinese Casserole

1 lb ground beef
1/2 cup raw rice
1/2 cup chopped onions
1 can cream of chicken soup
1 1/2 cup warm water
1 can cream of mushroom soup
1/2 cup rice noodles
2 tbsp soy sauce
1/8 tsp pepper

Brown beef and onions. Add soups and rinse cans with warm water. Add rice soy sauce, and pepper. Bake 350 degrees for 30 minutes, covered. Remove cover and bake 20 minutes. Sprinkles noodles on top. Bake 10 minutes.

Chinese Sauce

This is my mom's friend, Shila's recipe:

1 whole Chicken
1 Onion
1 stalk Celery
4 whole Cloves
Salt
1 can Mushrooms
Butter
2 cups Broth
3/4 cup Flour
1 can Cream of Mushroom soup
Half and Half

Boil chicken in water with onion, celery, cloves, and salt, until tender. Cut chicken up in bite size pieces. Add fried mushrooms, after frying in butter. Add broth, flour, cream of mushroom soup. Add half and half until smooth. Serve with noodles, cheddar cheese, celery, pineapple, coconut, almonds, rice, and green onions.

Chicken Stir Fry

3 Boneless Skinless Chicken Breast, thawed and diced
1 Bag Carrots or Broccoli, Frozen
2 Cups Minute Rice
1 Bottle Soy Sauce

In an electric skillet, spray with cooking spray and add diced chicken. Cook on medium heat until sides turn tan. Add frozen veggies and stir until soft. Add rice and soy sauce to taste and stir. Then Serve.
