Nacho Sauce

1 lb of Velveeta cheese
1 cup mild taco sauce
tortilla chips

Put cheese and taco sauce in the crock pot and cook on low for 8 hours.  Serve with tortilla chips.

Penne with Homemade Meat Sauce

1 LB Hamburger
2 (14.5 oz) cans of Diced Tomatoes
2 cups of Colby Jack Cheese, grated
1 LB Penne
Salt and Pepper, to taste.
1/4 tsp Garlic Powder
1 tbsp Minced Onion

In a pot, brown hamburger and add tomatoes.  Add garlic powder, onions, and salt and pepper and cook on medium for 10 minutes.  Cook penne as directed on box or bag in a separate pot.  Drain.  Add to sauce mixture and then cook for 5 minutes, while stirring in Colby Jack Cheese.

Barbecue Spare Ribs


Brown spare ribs. Bake in oven 2.5 hours at 250 degrees.

Barbecue Sauce:

Mix 1 part of honey to 2 parts of Heinz sauce.

Teriyaki Sauce

1/4 cup soy sauce
1/4 cup vegetable oil
5 tbsp of apple juice, pineapple juice, orange juice, or water
2 tsp chopped ginger root or 1/2 tsp ground ginger
1 tsp sugar
1 clove of garlic, chopped fine

Soak over night and cook the next day.

Hot Sauce

This is Keith's recipe:

3 quarts tomatoes
1 quart tomato juice
4 green peppers
5 stalks celery
1 onion
2 jalapeno peppers
1 tsp salt
1 tsp pepper
1 tsp garlic

Mix all together and refrigerate.

Shrimp Sauce

4 tbsp butter
4 tbsp flour
2 cups milk
1/4 cups heavy cream
1 1/2 tsp salt
1/4 tsp white pepper
1 1/2 tsp lemon juice
1 to 2 lb medium shrimp (cooked and finely chopped)
2 tbsp dill

In a 2 quart pan, melt butter over low heat. Remove from heat and stir in flour, milk, and cream all at once. Stir constantly. Place over low heat and cook until sauce is smooth and thick. Season with salt and pepper and lemon juice. Stir in chopped shrimp and cook another 1 to 2 minutes. Serve with cauliflower. Makes about 2 cups.

Hot Fudge Sauce for Ice Cream

This is Elaine Wayment Smith's recipe:

1/2 cup karo syrup
1/2 cup condensed milk
1 large hershey bar

Melt chocolate and add karo. Cook until creamy. Take off stove to add milk then cook again until creamy. Cook in double broiler.

Sauce for Frying Chicken

1 cup vinegar
1 cup water
1 stick of butter or margarine
1 tsp salt.

Baste on chicken and fry in broiler.

Parsley Sauce

2 tbsp butter
2 tbsp flour
1 cup chicken stock
2 tbsp finely chopped parsley
2 tsp lemon juice

In heave saucepan, melt butter. Remove from heat and stir in flour. Pour in chicken stock all at once. Beat until well blended. Return to low heat and cook till it comes to boil and is smooth and thick. Simmer 2 to 3 minutes. Add lemon juice, parsley, and pour sauce over fish. Makes about 1 1/2 cups.

Sweet and Sour Pork

This is my aunt Vivian's recipe:

Carrots
Green Pepper
Celery
Onions
Pork
1 tbsp Cornstarch
1 tbsp flour
1 egg
1 can pineapple chunks

Put rice on to cook. Saute in butter: carrots, green pepper, celery, onions, until they are basically done. Dip pieces of pork in cornstarch, flour, and egg, and fry.

Sauce:
1/3 cup wine vinegar
1/4 to 1/2 cup sugar
1/2 cup water
1 tbsp cornstarch
1/2 cup ketchup
Tomato sauce to taste

Place veggies on rice. Place chunks of pineapple and pork on veggies. Cover with sauce.

Chili Sauce

4 tomatoes
4 green peppers
4 large onions
2 cups vinegar
3 cups sugar
1/2 cup salt
3 tsp cinnamon
2 tsp nutmeg

Chop tomatoes, peppers, onions. Add vinegar, salt, sugar, cinnamon, nutmeg.

Cherry Sauce

1/2 cup Sugar
2 tbsp Cornstarch
3/4 cup Cherry Juice
1 cup Water
Dash of salt
1/2 tsp Almond Flavoring

Mix salt, sugar, and cornstarch together. Add water, cherry juice, and stir until it boils. Use with Cherry Cake.

Tomato Sauce

1 chopped Onion
1 large can Tomatoes
1 clove, chopped Garlic
4 tbsp Olive or Salad Oil
1 tsp salt
1/4 tsp Pepper

Brown onion and garlic in hot olive oil. Strain and add tomatoes. Mix in tomato paste. Simmer for 30 minutes until slightly thickened. Season to taste. If desired, bay leaves may be sauteed with onions and garlic to add flavor. If desired, ground beef can be browned with onion and garlic. Serve with 1 lb cooked lasagna noodles.

Chinese Sauce

This is my mom's friend, Shila's recipe:

1 whole Chicken
1 Onion
1 stalk Celery
4 whole Cloves
Salt
1 can Mushrooms
Butter
2 cups Broth
3/4 cup Flour
1 can Cream of Mushroom soup
Half and Half

Boil chicken in water with onion, celery, cloves, and salt, until tender. Cut chicken up in bite size pieces. Add fried mushrooms, after frying in butter. Add broth, flour, cream of mushroom soup. Add half and half until smooth. Serve with noodles, cheddar cheese, celery, pineapple, coconut, almonds, rice, and green onions.

Caramel Sauce

1 cup Sugar
2 cup Hot Water
1 cup Evaporated milk
1/8 tsp Salt
2 tbsp Margarine
1/2 tsp Vanilla
2 tbsp Cornstarch
1/2 cup Cold Water

Combine cornstarch with cold water. Combine hot water, evaporated milk, half the sugar, salt, margarine, and vanilla. Thicken with cornstarch mixture. Stir and cook until thick and clear. Brown the remaining sugar in heavy skillet. Add Cornstarch mixture to browned sugar and stir.

Roast and Gravy

This is RuthAnn's recipe:

1 Roast
Basil Leaves
Onion Salt
Salt and Pepper

Put roast in pan. Sprinkle onion salt, basil leaves, salt, and pepper on both sides. Brown both sides of roast on stove. Add enough water to make 1 inch in pan. Add cut up carrots and/or potatoes if desired. Bake at 290 degrees for 3.5- 4 hours, or until tender. Make sure water is always in it.

Gravy:

1 cup Water
2 tbsp Flour
Water from Roast Pan

Mix water, with flour, then adding to water from Roast pan. Cook ingredients on stove, stirring. If too thick, add more water. If too thin, add more flour.

Cranberry Sauce

This is my great-grandmother Bardella's recipe:

3 Cups of Cranberries
1 cup of water
1 1/4 cups Sugar

Wash cranberries and put in stew pan, adding water and sugar. Boil for 15 minutes. Do not boil over.

Meatballs and Sauce for Spaghetti


1 lb Ground Round
1/4 lb Sausage
1 carrot
1 stalk celery
1 small onion
1/2 cup ground meal or mashed cracker crumbs
1 egg
4-5 pieces of Parsley
1/2 tsp Salt and Pepper
1/4 tsp Allspice

Stir all together and form into balls. Cook in oil until Brown.

Sauce for Meatballs

1 lb heel of Veal
2 cloves Garlic
2 carrots
2 stocks Celery
1 medium Onion
1/2 bunch Parsley
1/4 tsp All Spice
1 tsp Salt and Pepper
2 quarts Tomatoes

Cut up small pieces of Veal and brown. Add tomatoes and other ingredients. Bring to boil. Lower temperature and simmer for 2-3 hours until thick.
