Italian Rice Dressing For Turkey

This is my great aunt Faye's recipe.  It's an Italian rice stuffing and it so good.  We make it every year.   


Ingredients:   
                          
 1 stick butter                                                                                             
1 3/4 cup Minute rice, cooked
1 lb Sausage, raw
1 egg
1/4 tsp Allspice
3 tsp Sage
1 tsp Salt
8 slices of Bread
2 carrots
1 bunch of Parsley
2 Celery
1 large Onion


Break the bread into crumbs and put in a Ziploc bag and let sit for a few hours, to harden.  Grind up carrots, parsley, celery, and onion in food chopper and put them in a skillet pan on the stove. Simmer in butter until they are cooked. Let veggies cool.  Cook minute rice as directed on the package.  Add raw sausage and bread crumbs to veggie mixture, and add allspice, egg, sage, and salt.  Mix all together in a big bowl.. Put all ingredients into turkey and cook turkey in the oven.

Slow Roasted Turkey



We cook our turkey overnight to have a moist slow roasted turkey.

Thaw out your bird in the sink full of cold/warm  water for a couple of days,

We also put bacon and poultry seasoning on top to have a nice flavor.

Cook it on 450 degrees for an hour, then reduce temperature to 200.  Cook for at least 10 hours, and you can keep it in the oven on warm until you're ready to serve.

Lemon Jell-O Salad with Pineapple, Cheese, and Nuts

1 small can Crushed Pineapple (drained)
1/2 cup Sugar
1 package Lemon or Orange Jell-O
1 cup Water
1/2 cup Walnuts
1 cup Cheddar Cheese
1 cup Cool Whip

Bring the pineapple and sugar to a boil, then add the jell-o and water. Cook until dissolved. Chill until it starts to set and then add nuts, cheese, and whipped cream. Refrigerate before and after serving.

Pumpkin Pie






1 (9 Inch) Unbaked Pastry Shell
1 (16 oz.) Can of Pumpkin
1 (14 oz.) Can of Sweetened Condensed Milk
1 tsp Cinnamon
1/4 tsp Nutmeg
1/2 tsp Ginger
1/2 tsp Salt

Preheat oven to 425 degrees. In large bowl, combine all ingredients except pastry shell; mix well. Pour into pastry shell. Bake 15 minutes. Reduce oven temperature to 350 degrees. Bake for 35 to 40 minutes longer or until knife comes out clean. Cool. Garnish as desired. Refrigerate leftovers. Makes one 9-inch pie.  Can cook two pies by doubling the recipe and using one cookie sheet.

Oatmeal Cookies

This is my grandmother Cleone's recipe:

1 cup sugar
1/2 cup shortening
2 eggs
2 cups oatmeal
1 cup milk
2 cups flour
1 tsp soda
1 tsp cinnamon
1/4 tsp salt.

Bake at 400 degrees for 10 minutes.

Homemade Bread

This is Lael Wall's recipe:

7 cups Unbleached Flour
2 tbsp Salt
2 tbsp Powdered Milk
2 tbsp Instant Yeast
2/3 cup Sugar

Blend together.

Add:
5 1/2 cups water 
6 tbsp oil.

Blend then add 6 cups of flour.

Mix for 7 minutes. 

Put in oiled bowl.

Let rise till doubled in size.

Punch down and let rise 40 minutes.

Punch down and let rise 20 minutes.

Roll out into 4 loaves.  

Let rise 15 minutes.

Bake at 350 degrees for 30 minutes.

Cherry Crumb Pie

1 frozen pie crust
1 (21 oz) can cherry pie filling
1/4 cup flour
2 tbsp brown sugar
2 tbsp butter or margarine, melted

Heat over to 425 degrees.

Spoon filling into frozen pie crust.  In small bowl, combine flour, brown sugar, and butter, until crumbly.  Sprinkle over filling.  Bake 35 to 45 minutes until filling is bubbly.

No Bake Fudge

1 (20 oz) chocolate bar
1 can Eagle Brand milk
1/2 tsp salt
1 tsp vanilla
1 small bag chopped walnuts

Melt chocolate.  Add milk, salt, and vanilla.  Sit until well mixed.  Add nuts.  Shape into rolls.  Refrigerate until cool.  Cut into slices.

Pumpkin Spice Cookies

3 cups flour
1 tsp baking powder
1/2 tsp salt
1 1/2 cup sugar
1 cup butter
2 tsp vanilla
2 tbsp pumpkin spice
2 eggs

Sift flour, baking powder, and salt together. In a separate bowl, cream butter and vanilla together until softened. Add sugar to butter mixture until fluffy. Add eggs one at a time to butter mixture, stirring after each one. Add a fourth of the dry ingredients to the butter mix at a time, stirring after each fourth. Cover bowl and chill in refrigerate over night. Remove dough from fridge and shape into ball 1/4 inch thick. Use cookie cutters to make shapes and lay cookies on a greased cookie sheet.


Bake at 400 degrees for 6 to 8 minutes.  Let cool on wax paper before moving the cookies to the container.  Makes 2 to 3 dozen.

Caramel Chocolate Cake

1 package chocolate cake mix
1 Score or Heath candy bar
2 or 3 bottles of Caramel Sauce
1 package Whipped Cream


Prepare and bake chocolate cake mix, as directed on box. While cake is warm, poke holes into cake and pour caramel sauce on top.




When cake is cool, put cool whip on top.



Sprinkle candy crumbs on top of cool whip,


Refrigerate leftovers.

3 cups flour
1 tsp baking powder
1/2 tsp salt
1 1/2 cup sugar
1 cup butter
2 tsp vanilla
2 eggs

Crock Pot Pork Chops

1 package of ranch seasoning
1 can cream of chicken
4 pork chops
4 large potatoes, diced
1/2 cup milk
1/2 cup parmesan cheese
1/2 tbsp garlic powder
2 tbsp butter

Spray crock pot with butter spray.  Place pork chops on the bottom, pouring ranch seasoning and cream chicken over them.  Cook on low for 6 hours.  Boil potatoes for 20 minutes on the stove until tender.  Mash them with butter, Parmesan, milk, and garlic powder.  Serve with pork chops.

Chocolate Raspberry Pie



1 carton of cool whip
1 bag frozen raspberries, thawed
1 chocolate cookie crumb pie crust
1 can sweetened condensed milk


In a bowl, combine cool whip, raspberries and juice, and condensed milk.  Mix well.  Pour into chocolate pie crust.  Refrigerate for three hours or overnight.  

Magic Cookie Bars



1 1/2 cup Corn Flake Crumbs
1/2 cup Margarine, melted
1 1/2 cup flaked Coconut
1 can Sweetened Condensed Milk
3 tbsp Sugar
1 package Milk Chocolate Chips
1 cup Chopped Walnuts

Place corn flake crumbs, butter, and sugar in 9 by 13 pan and press down with the back of a spoon. Scatter evenly chips, coconut, and walnuts. Pour milk over all and bake 25 minutes at 350 degrees.
