Roll the chicken breast in flour, egg, and breadcrumbs. Brown on both sides for 4 to 5 minutes in skillet with vegetable oil and butter. Place breasts in baking pan and top each breast with a piece of ham and a piece of swiss cheese. Bake at 350 degrees for 40 minutes.

Candy Corn Fudge
I found this recipe on Pinterest, from a site called Something Swanky.
Ingredients:Directions:
- 6 cups white chocolate chips (I found that Nestle Toll House melted best)
- 2 cans sweetened condensed milk
- Food coloring: yellow, orange (I used gel)
- Line a 9x9 baking dish with wax paper.
- In a large saucepan, combine white chips and sweetened condensed milk over medium-low heat. Stir until completely melted and smooth. Remove from heat.
- Pour 1/3 of the mixture into prepared baking dish and chill for 15 minutes. (Keep remaining fudge in saucepan, heat off).
- Stir fudge over low heat until melted and smooth again (should only take a minute or two).
- Pour 1/3 of mixture into a medium mixing bowl and whisk in orange food coloring (or 2 yellow + 1 red). Pour over the white layer in baking dish. Let chill for 15 minutes.
- Again, reheat the remaining 1/3 of fudge over low heat until melted and smooth. Whisk in yellow food coloring and pour over orange layer in baking dish.
- Let chill for 3-4 hours or overnight (best results).

Crock Pot Roast
8 red potatoes
15 baby carrots
1 pkg dry onion soup mix
1 cup water
1 tsp celery salt
1/2 onion chopped
Brown roast in a pan. Dice potatoes and onion. Put roast, either as a whole or cut in half, in crock pot, and line with carrots, onions, and potatoes. Add soup mix and water on top. Cook in crock pot for 8 to 10 hours, stirring occasionally. When it reaches 8 hours, taste carrots and potatoes to see if they are tender.

Creamy Spaghetti
1 can tomato sauce
1/2 lb spaghetti
1 pkg cream cheese
1 cup grated Parmesan cheese
2 tbsp butter
Cook spaghetti. I an skillet, melt butter and then add cooked spaghetti. Add tomato paste and sauce and stir. Add cream cheese and grated Parmesan cheese and mix until warm. Serve with cooked meatballs.

Chicken and Broccoli Alfredo
Inspired by Campbell's recipe, with a few alterations:
1 can Cream of Mushroom soup
1 cup frozen broccoli
3 chicken breasts, thawed
2 tbsp butter
1/2 lb medium macaroni shells
1/4 tsp ground black pepper
2 cups grated Parmesan cheese
Cook macaroni as instructed on bag or box. Add broccoli and cook until broccoli is soft. Drain. Cut chicken breasts and cook chicken in a greased skillet. Add butter till melted. Add cream of mushroom soup, pepper, and Parmesan cheese, mixing all together. Add macaroni and broccoli to mixture and stir, until hot. Sprinkle Parmesan cheese on top.

1 bag shredded cheddar cheese
bread bowls (1 per person)

Cilantro Caesar Dressing
Cilantro Caesar Dressing:
Every time I go to California, I usually go to a restaurant called El Torito. I usually order their Mexican Caesar Salad and enjoy it immensly. Here is a version of their salad dressing:
1/4 tsp minced garlic
1/4 tsp black pepper
1 tsp salt
1/4 cup vinegar
12 ounces canola oil
1/4 cup vinegar
1 bunch Cilantro leaves
1 1/2 cup mayonnaise
1/4 cup water
Mix all together in a glass bowl with an electric mixer until well blended. Put in airtight container in refrigerator and keep refrigerated. Will last for three days. Serve with romaine lettuce and sprinkle grated Parmesan cheese on top. The restaurant also serves their salad with cooked red chili peppers, tortilla strips, cotija cheese, and pepitas (pumpkin seeds).

No Bake Peanut Butter Bars
I found this recipe on Pinterest and thought it looked good. I made the bars and they were delicious:
1 cup peanut butter1 cup butter2 cups graham cracker crumbs2 cups powdered sugarMelt butter and peanut butter on stove until creamy. Add crumbs and powdered sugar and mix all together. Press peanut butter mixture into a greased 9 by 13 pan.Topping1 1/2 cup chocolate chips4 tbsp peanut butterMelt chips with peanut butter on stove or microwave and stir until mixed. Spread chocolate mixture on top of peanut butter mixture in pan. Refrigerate for at least 1 hour. May store them in refrigerator or on counter with lid.

Orange Muffins
I found this recipe on ALL RECIPES and it is very good.

Blend 1 tablespoon melted margarine, 1/4 cup brown sugar, 1/2 teaspoon cinnamon and sprinkle on top of each muffin. Bake in a preheated 350 degrees F (175 degrees C) oven for 20-25 minutes. French Dressing
3/4 cup sugar
1 cup vegetable oil
1/2 tsp salt
1/2 tsp paprika
1 can tomato soup
1/3 cup vinegar
1 small onion, grated (or minced onion as a substitute)
1/2 tsp Worcestershire Sauce
1/4 tsp black pepper
Combine ingredients in a blender and process or whisk until smooth and well blended. Store ina tightly covered container in the refrigerator. Makes 3 1/2 cups.

Pina Colada Jam
This is Jeannie Larue's Recipe:
6 cups sugar
6 cups shredded peeled zucchini
1 8oz can crushed pineapple, undrained
1/4 cup lime juice
2 3oz packages pineapple jello
1 tsp rum extract
Combine sugar, zucchini, pineapple and lime juice. in a Dutch oven. Bring to a boil. Boil 10 minutes stirring constantly. Remove from heat and stir in gelatin and extract until gelatin is dissolved. Pour into jars leaving 1/2 in head space. Refrigerate 3 weeks, freeze 1 year, or process 5 minutes.

Pork Chops with Apples
3 apples
1/2 cup brown sugar
1/3 cup water
Preheat oven to 350 degrees. Slice and peel the apples and place half of them in a greased 9 by 13 pan. Place pork chops on top of apples and add remaining apple slices on top. Sprinkle with brown sugar. Bake for 20 minutes. Baste pork chops with water and pan juices and add more brown sugar. Bake for another 20 minutes.

Chocolate Pudding Surprise
1 cup flour
1 square butter or margarine
1/2 cup chopped walnuts
Mix and put in bottom of pan. Bake at 350 degrees for 15 minutes, or until it is light brown. Let cool.
Second Layer:
1 small package of cream cheese
1 cup powdered sugar
1/2 container of (16 oz) cool whip
Mix and put on top of crust. Let cool.
Third Layer:
3 cups milk
1 small package of instant pudding (either vanilla or chocolate)
Cook pudding and milk as directed on box. Let cool. Add pudding to cake.
Fourth Layer:
Add other half of cool whip and spread on top of cake. Shred chocolate bar and sprinkle on top of cool whip. Keep refrigerated.

Pumpkin Cobbler
1 bag Chocolate Chips
6 tbsp butter
1/2 cup chopped walnuts
1 tsp cinnamon
1 tsp allspice
1 white cake mix
2 tbsp water
Preheat oven to 350 degrees. Grease 9 by 13 inch pan. In a bowl mix pumpkin and spices and pour into greased pan. Sprinkle chocolate chips over pumpkin. Sprinkle cake mix and walnuts over pumpkin and chocolate. Sprinkle water over cake mix. Melt butter and drizzle over cake mix. Bake for 60 to 70 minutes or until a knife inserted into the center comes out clean. Cool slightly and serve with whipped cream.

Old Fashioned Oatmeal Cookies
1 cup raisins
1 1/2 cup sugar
1 tsp salt
1 tsp cinnamon
2 cups oats
1 cup water
2 eggs
1/2 tsp cloves
1/2 tsp baking powder
2 1/2 cups flour
3/4 cup shortening
1 tsp vanilla
1 1/2 tsp baking soda
Simmer raisins in water for 20 minutes. Drain, saving 1 cup of water. Cream shortening, sugar, eggs, and vanilla. Add raisins and water. Add dry ingredients. Spoon 2 inches apart on greased baking sheet. Bake at 400 degrees for 8 to 10 minutes to get soft and flat oatmeal cookies.
