Crispy Oat Cookies


This is Zig Peacocks's recipe:

1/4 cup butter
1 cup sugar
1 tsp baking soda
3/4 cup flour
1 cup quick oats
1/4 cup canola
1 tsp vanilla
1 tsp cream of tartar
1/4 cup cornstarch
1 1/2 cup rice krispies
1 tbsp water
1 egg
1/2 tsp salt
1/3 cup coconut

Cream butter and 3/4 cup sugar. Add oil and water. Beat in egg and vanilla. Stir in flour, cornstarch, soda, and tartar. Gently add rice krispies, coconut, and oats. Roll into 1 inch balls. Flatten with a cup dipped in sugar. Bake at 350 degrees for 10 to 12 minutes. Makes 5 dozen.
