Pineapple Cookies

2 cups Flour
1 tsp Baking Soda
1/2 cup Shortening
1 Egg
1/2 cup Coconut
1/2 cup Walnuts
1 tsp Baking Powder
1/2 tsp Salt
1 cup Brown Sugar
1/2 tsp Vanilla
1/2 cup Crushed Pineapple

Sift dry ingredients together. In bowl, combine shortening, sugar, egg, and vanilla. Beat well, then stir in pineapple, nuts, coconut. Add flour mixture and mix well. Bake at 375 degrees until light brown.
