Old Fashioned Poundcake

2 cups butter
4 1/4 cups sifted flour
2 cups sugar
1 tsp vanilla
10 eggs, separated

Cream butter and work into flour until mixture is mealy. Beat egg yolks, sugar, and vanilla until thick and fluffy. Add first mixture gradually, beating thoroughly. Fold in stiffly beaten egg whites. Beat vigorously 15 minutes. Pour into two greased loaf pans and bake at 325 degrees for 75 minutes. Makes 2 loafs.

Brown Cookies

This is Betty's recipe:

3 eggs
1 1/2 cup brown sugar
1 cup butter
2 1/2 cup flour
1 tsp soda
1/2 tsp salt
1 tsp cinnamon
1 cup walnuts
1 cup raisins

Bake at 375 degrees for 7 to 8 minutes.

Macadamia Nut Pie

This is Sheri Simmons's recipe:

1 box vanilla pudding
1/4 cup milk
1 tsp vanilla
1 cup macadamia nuts
1 tsp margarine
1 cup whipping cream
3 tbsp powdered sugar

Make pudding according to package directions, adding milk. When cool, add butter. Stir once. Cool 2 to 3 hours. Bake a 9 inch pie crust and cool. To Whipping cream, add vanilla and powdered sugar. Whip until it holds stiff peaks. To this, add chopped macadamias nuts. Fold cream into cooled pudding. Pour into cooled pie shell and chill. Serves 6.

Teriyaki Sauce

1/4 cup soy sauce
1/4 cup vegetable oil
5 tbsp of apple juice, pineapple juice, orange juice, or water
2 tsp chopped ginger root or 1/2 tsp ground ginger
1 tsp sugar
1 clove of garlic, chopped fine

Soak over night and cook the next day.

Lemon Salad

2 package of instant lemon pudding mix
1 large container of cottage cheese
1 large can of crushed pineapple
1 large package of frozen cool whip

Chocolate Pudding Dessert

This is Elaine Smith's recipe:

1 cup flour
1 cup walnuts
1 cup butter or margarine.
8 oz cream cheese
1 cup powdered sugar
1 small package of cool whip or dream whip
8 oz chocolate instant pudding
1 package vanilla instant pudding


Cut butter and nuts into flour and press into a 9 by 13 pan. Bake at 350 degrees for 20 minutes. Serves 12. Beat cream cheese, sugar, and fold in cool whip. Spread over crust and cool. Mix chocolate and vanilla instant pudding together and spread over cream cheese. Top with whipped cream and grated chocolate.

Popsicles

1 box instant chocolate jell-o pudding
3 1/2 cups milk
1/4 cup sugar

Mix in bowl and mold into popsicle molds and freeze.

Nachos

1 can cheddar cheese soup
1/2 cup salsa
Tortilla chips
1 chopped tomato
Sliced green onions
Sliced olives
Chopped green or red pepper

In 1 1/2 quart saucepan, combine salsa and soup. Over low heat, heat through, stirring often. Mix with tomato slices, green onions, olives, and peppers. Serve with tortilla chips.

Hot Sauce

This is Keith's recipe:

3 quarts tomatoes
1 quart tomato juice
4 green peppers
5 stalks celery
1 onion
2 jalapeno peppers
1 tsp salt
1 tsp pepper
1 tsp garlic

Mix all together and refrigerate.

Jell-o and Pudding Cake

This is Robin's recipe:

1 Angel food cake
1/4 cup orange juice
1 box strawberry or raspberry jello
3/4 cup boiling water
1/2 cup cold water with ice cubes to make 1/2 cup
1 small box instant vanilla pudding
1 1/2 cup milk
1/2 cup cool whip

Cut Angel Food Cake into chunks and place into dish. Sprinkle orange juice and mix in box of jello (quick set method). Mix water and ice cubes over cake chunks. Add strawberry and banana slices. Let set about 20 minutes. Mix vanilla pudding and milk until thick. Add cool whip and mix all together and pour over jell-o layer. Let set.

Cherry Nut Cake

1 1/3 cup sugar
4 tbsp shortening
2 eggs
2 tsp baking soda
4 tsp warm water
2 cups flour
1/3 cup cherry juice
2 cups pitted sweet cherries
1 tsp salt
1 cup walnuts

Cream sugar and shortening. Add eggs and beat. Dissolve soda into warm water. Add soda, flour, cherry juice, cherries, salt and nuts to shortening mixture. Bake at 350 degrees for 35 minutes.

Beef and Salsa Burritos


1 1/4 lb ground beef
1 1/2 tbsp chili powder
1/2 tsp ground cumin
1 1/4 cup salsa
1/2 tsp salt
1/4 tsp pepper
1 cup shredded cheddar cheese
8 medium flour or wheat tortillas, warmed

Brown beef. Season beef with chili powder, cumin, salt, and pepper. Stir in salsa and heat through. Remove from heat and add cheese. Spoon beef mixture into each tortilla. Makes 8 burritos.

Jam Butter

1/3 cup powdered sugar
1/2 cup softened butter
1 tbsp jam or jelly.

Mix together and refrigerate.

Peanut Butter Fudge Bars

This is Teri Coffey's recipe:

1 box yellow cake mix
1/2 cup butter or margarine, softened
1 cup peanut butter
1 cup milk chocolate chips
1 can condensed milk
1 can coconut frosting mix

Mix together cake mix, butter, and peanut butter in a large bowl. Press 2/3 of mixture into bottom of a 9 by 13 inch pan. Microwave condensed milk and chocolate chips until melted and add coconut frosting mix. Pour over dough in pan. Crumble the remaining 1/3 of dough on top. Bake at 350 degrees for 20 minutes. Cut when cool.

Dump Cake

20 oz can Crushed Pineapple
1 box white cake mix
1 can cherry pie filling
1/2 cup melted butter

Butter a 9 by 13 inch cake pan lightly. Spread crushed pineapple on bottom of pan. Cover with 1/2 box cake mix. Spread can of cherry pie filling over all. Cover with rest of white cake mix. Dribble 1/2 cup melted butter or margarine over top of cake. Bake at 350 degrees for one hour.

Peach Cobbler

6 to 8 sliced peaches
1 cup sugar
2 eggs
1 large
1 cup milk
1/2 cup shortening
1/4 cup cold water
Pinch of salt
2 tsp baking powder
2 to 2 1/4 cups flour
1 tsp vanilla

Preheat over to 350 degrees. Mix sugar and shortening until batter is lumpy. Add eggs, milk, and water. Stir only once- having shortening in lumps. Add flour, salt, and baking powder. Put half of the batter in greased baking pan. Slice half of the peaches on top. Sprinkle with mace and nutmeg. Add rest of batter and sliced peaches. Sprinkle with nutmeg and mace. Bake 45 to 50 minutes, or until light brown.

Glaze:

2 cups canned milk (dilute with water)
Piece of butter or margarine
1/3 cup cold water
1/3 cup sugar
3 tbsp flour

In double broiler, mix canned milk with margarine. Mix in another bowl, water, sugar, and flour, to make a paste. Stir in hot milk. Thicken until it coats spoon. Serve over warm cobbler.

Garlic Bread

6 pieces of Italian Bread
2 cloves of Garlic
2 tsp Extra Virgin Olive Oil

Place bread on aluminum foil on cookie sheet. Drizzle olive oil on top of each slice. Crumble garlic over the top. If desired, sprinkle parmesan cheese on top as well. Bake at 350 degrees until golden brown.

Chicken Pillows

This is Di Ann Crews's recipe:

1/2 cup and 2 tbsp melted butter
1 (8 oz) softened cream cheese
1 cup peas
2 stalks diced celery
1 tbsp diced onion
1 (4 oz) can mushrooms
2 cups cooked and cubed chicken
3/4 cup seasoned crouton crumbs
16-32 Rhodes rolls

Combine 2 tbsp melted butter with cream cheese. Add peas, celery, onions, and mushrooms to mixture. Add chicken and mix well. Roll out rolls. Add 1 heaping tbsp of mixture to each roll. May fold roll in half, pinching the edges of the two together. Brush roll with melted butter and coat in crouton crumbs. Bake at 375 degrees for 20 minutes. Serve with gravy.

Root Beer


1 bottle Hires root beer
4 3/4 gallon water
4 3/4 lbs sugar
5 lbs dry ice

In large containter, add extract to water. Add sugar to mixture, may desire more. Add dry ice and let set for 30-45 minutes. Serve

Corn Fritters

1/8 cup Corn Meal
1/3 cup Sugar
1/3 cup Oil
2 tsp Salt
1 3/4 cup Milk
3/4 cup Creamed Corn
2 slightly beaten Eggs
1 package yeast
6 cups Flour

Cook corn meal, sugar, oil, salt and milk until thick and then let cool. Then add creamed corn, eggs, and yeast. Add flour until dough is stiff. Let raise until dough is double in bulk. Deep fry in hot grease.

Stuffed Green Peppers


This is Darlene Collier's recipe:

4 medium sized green peppers
1/2 lb ground beef
1/2 cup chopped onions
1 tbsp margarine
1 can tomato soup
2 cup cooked rice
2 tbsp Worcestershire sauce
1 tsp salt and a dash of pepper
Garlic salt, to taste

Brown meat. Saute onions in butter. Mix with cooked rice, tomato soup, salt, pepper, worcestershire sauce, and garlic salt. Boil Green peppers for 5 minutes.

Breakfast Casserole

This is Sheri Simmons's recipe:

8 eggs, slightly beaten
6 slices of cubed bread crumbs
2 cups milk
1/2 tsp salt
1 cup grated cheddar cheese
1 lb sausage, browned, crumbled, and drained

Mix all together and put in greased 9 by 13 inch pan. Refrigerate overnight. Bake 350 degrees for 35 minutes.

Scalloped Potatoes

1/2 cup ham, cooked and cut up into cubes
1 can cream of mushroom soup
1 can milk
1/3 cup chopped onion
1 tsp garlic salt
1 cup grated cheddar cheese
3 quarts cubed potatoes

Boil potatoes like you do for potato salad. Cube and put in casserole dish. Mix ham, cream of mushroom, milk, chopped onion, and garlic salt and pour over potatoes, mixing well. Sprinkle cheese on top. Bake at 350 degrees for 30 minutes.

Leftover Turkey Surprise

This is Sheri Simmons's Recipe:

Leftover sliced turkey
Frozen broccoli spears
1 can condensed cheddar cheese soup
1/2 can milk

Mix cheese soup and milk. Arrange turkey and broccoli in a 13 inch baking dish. Pour soup mixture over top. Bake at 350 degrees for 30 minutes to 1 hour, until hot and bubbly.

Chocolate Banana Cookies

2 1/2 cups flour
2 tsp baking powder
1/2 tsp salt
1/2 tsp baking soda
2/3 cup shortening
2 eggs
1 cup sugar
1/2 tsp vanilla
1 cup chocolate chips
1 cup bananas, mashed

Mix as for standard cookie recipe. Drop by teaspoons on greased cookie sheet. Bake at 400 degrees for 10 to 12 minutes. Makes 6 dozen.

Banana Muffins

This is Darlene Collier's recipe:

1/2 cup shortening
1 cup sugar
2 eggs
1 tsp vanilla
3 bananas
1 1/2 cups flour
1 tsp soda
1/2 tsp salt

Mix an pour into greased muffin tins. Bake at 350 degrees for 15 minutes.

Lemon Bread

1/2 cup shortening
1 cup sugar
Grated peel of 1 lemon
2 eggs
1 1/4 to 1 1/2 cups flour
1 tsp baking powder
1/2 tsp salt
1/2 cup milk
1/2 cup chopped walnuts

Cream shortening, sugar, and beaten eggs. Add flour, baking powder, salt, milk, lemon peel and nuts. Bake at 350 degrees for 1 hour. Combine icing ingredients and mix. Poke holes in bread and pour icing in while hot.

Icing:
1/4 cup sugar
Juice of 1 lemon

Cheese Broccoli Soup

4 qts. water
12 chicken bouillon cubes
3 cubes of margarine
1 1/2 cup flour
16 oz jar of Cheese whiz
1 large head of broccoli or 3 small packages of frozen broccoli

Bring to a boil, water, and chicken bouillon cubes. Cut up broccoli in bite size pieces. Add to water and cook until tender. Melt margarine in another small pan. Add flour and stir into boiling water. Stir until thickened and smooth. Add cheese whiz, stir until melted. Ready to eat. Takes about 20 minutes to make.

Cherry Pie

1 quart Cherries, drained
1 cup juice
2/3 cup Sugar
2 tbsp Cornstarch
Salt
Cinnamon
Butter
1/4 tsp Almond Extract.

Combine cornstarch, sugar, and salt. Add juice and almond extract. Cook until thick. Cool. Add cherries. A Put in pie shell. Sprinkle cinnamon on top of pie crust and dot it with butter. Bake at 375 degrees for 50 minutes, or until golden brown.

Caramel Marshmallow Bars

49 caramels
3 tbsp water
5 cups rice krispies or toasted oat cereal
1 cup peanuts
1 cup chocolate chips
1 cup butterscotch morsels

Melt caramels with water in sauce pan over low heat. Stir frequently until sauce is smooth. Pour over cereal and nuts. Toss until well coated, with greased fingers. Pour into a greased 9 by 13 pan. Sprinkle morsels and chips on top. Bake at 200 degrees for 5 minutes or until softened. Spread softened morsels and chips until blended to form a frosting. When cool, cut into bars.

Sugar Coated Peanuts

2 cups raw unsalted peanuts
1 cup sugar
1/2 cup water

Cook over medium heat until peanuts are coated with sugar and no liquids are in the pan. Pour on buttered cookie sheet. Sprinkle with salt. Bake at 300 degrees for 15 minutes. Turn nuts with metal spatula and bake for 15 more minutes.

Vinegar Taffy

2 tbsp butter
1/2 cup water
2 tbsp vinegar
2 cups sugar
1 tsp vanilla

Melt butter, add water and vinegar. Bring to boil. Dissolve sugar. Cover pan and cook 3 to 5 minutes. to a hard boil stage.

Candy Coated Pecans

1 cup brown sugar
1/2 cup sugar
1/2 cup sour cream
1/2 lb pecans

Boil sugars and cream until mixture, when tested, forms a soft ball in cold water. Remove from heat and beat a few minutes. Add pecans and stir gently until nuts are completely coated. Drop by teaspoons onto wax paper.

Popcorn Balls

Popped popcorn
2 cups sugar
1 1/2 cup water
1/2 cup corn syrup
1/3 tsp salt
1 tbsp vinegar

Bring to a boil, sugar, water, and syrup. Then add other ingredients and cook till it strings good long strings and cracks in col water, not a hard crack. Pour over popcorn and let cool. Form into balls.

Rice Krispies Treats

32 marshmallows
1/4 cup butter
5 cups Rice Krispies

Cook marshmallows and butter 5 minutes in top of double boiler. Then pour rice krispies into mixture and cool in refrigerator for a few minutes. Then pour in buttered pan. Cut into squares.

Rice Krispies Candies

1 package of Rice Krispies
1 package of corn flakes
1 lb coconut
1 cup peanuts, halved
2 cups sugar
2 cups white Karo syrup
1 cup milk
1 tsp vanilla

Mix together cereal, coconut, and peanuts. Cook sugar, Karo syrup, and milk and Boil until soft ball is formed when dropped in cold water. Take off stove and add vanilla. Pour over cereal mixture. Make balls or leave in pieces.

Chocolate Cream Nut Slices

1 small package cream cheese
1 square margarine or butter, melted
1 tsp vanilla
1 package of powdered sugar
1/4 cup cocoa
1 cup walnuts

Mix cream cheese, butter, and vanilla. Add powdered sugar, cocoa, and walnuts. Then put in a roll and put in the refrigerator over night. Take out and slice.

Chocolate Marshmallow Bars

2 squares butter or margarine
1/3 cup cocoa
2 cups sugar
4 eggs
1 1/2 cup flour
1 1/2 cup walnuts
2 tsp vanilla
1 package Mini Marshmallows

Mix butter, cocoa, and sugar well. Add eggs and beat well after adding flour, walnuts, and vanilla. Put on greased cookie sheet. Bake at 350 degrees for 25 minutes. Remove from oven and coven with marshmallows and return to oven for 3 minutes. Let cool 1 hour, then spread icing on top.

Icing:

1/2 cup butter
1 1/3 cup powdered sugar
1/3 cup cocoa
1/3 cup canned milk

Mix and Let stand room temperature over night or all day.

Candied Apples Sticks

7 apples
1 drop red food coloring
1 cup sugar
1/4 tsp cinnamon
1/3 cup Karo syrup
3/4 cups water to 3 cups sugar

Combine Karo syrup, sugar, and water. Cook till cracks when tested in cold water. Add coloring and cinnamon before removing from stone. Put sticks in apples and twirl quickly in syrup. Place on greased cookie sheet to cool.

Marshmallows

Dissolve 1 package of gelatin in 8 tablespoons of cold water. In the meantime, boil together 2 cups of sugar and 3/4 cup of boiling water until it forms a soft ball in cold water. Add gelatin and beat 20 minutes. Add the beaten whites of 2 eggs and beat 10 minutes. Add 1 teaspoon of vanilla. Pour on platter to cool.

Zucchini Drop Cookies

1 cup Margarine or butter
1 cup unpeeled and raw, grated zucchini
1 cup brown sugar
1 egg
1 1/2 tsp vanilla
2 1/2 cups flour
1 tsp baking powder
1 1/2 tsp cinnamon
1 tsp nutmeg
1 tsp baking soda
pinch of salt

Heat oven to 350 degrees. Beat together margarine, brown sugar, egg, and vanilla until light and fluffy. Stir in zucchini. Add flour, baking powder, baking soda, and spices. Beat until blended. Drop by teaspoons on ungreased cookie sheet. Good with chocolate chips and nuts. Bake 10 to 12 minutes.

Date Macaroons

This is Elanove Jones's Recipe:

3/4 cup sugar
1 cup chopped dates
2 eggs
1 tsp vanilla
1 cup walnuts
1 cup corn flakes
1 cup rice krispies
1/2 package coconut

Take a heavy skillet. Mix sugar, dates, and beaten eggs in pan. Cook over medium heat until the mix leaves the sides of the pan, about 5 minutes. Cook about 3 minutes more and add vanilla, nuts, and carefully add the corn flakes and rice krispies. Wet hands and form into balls. Then roll into coconut and cool.

Brownies

This is Elaine Smith's recipe:

1/2 cup cocoa
2 tsp Mexican vanilla
2 sticks margarine or butter
2 cups sugar
4 eggs
1 cup walnuts
1 1/2 cup flour
dash of salt

Beat margarine, sugar, eggs, and vanilla together. Then add cocoa and mix well. Stir by hand, the flour, salt, and walnuts. Bake in 9 by 13 greased pan at 350 degrees for 30 to 40 minutes.

English Toffee

This is Florence's recipe:

2 1/2 cups sugar
1/4 cup light Karo
1 lb butter
1 cup hot water

Cook till 285- 290 degrees. Add 1 lb walnuts and 1 bag chocolate pieces.

Cowboy Cookies

1 cup brown sugar
1 cup sugar
2 cups flour
2 cups oatmeal
2 eggs
1 tsp soda
1/4 tsp baking powder
1 cup coconut
1 cup chocolate chips
1 cup shortening
1/4 cup milk

Mix and drop onto cookie sheet. Bake at 350 degrees for 12 minutes.

Shrimp Sauce

4 tbsp butter
4 tbsp flour
2 cups milk
1/4 cups heavy cream
1 1/2 tsp salt
1/4 tsp white pepper
1 1/2 tsp lemon juice
1 to 2 lb medium shrimp (cooked and finely chopped)
2 tbsp dill

In a 2 quart pan, melt butter over low heat. Remove from heat and stir in flour, milk, and cream all at once. Stir constantly. Place over low heat and cook until sauce is smooth and thick. Season with salt and pepper and lemon juice. Stir in chopped shrimp and cook another 1 to 2 minutes. Serve with cauliflower. Makes about 2 cups.

Funeral Potatoes

This is Velma's recipe:

6 Medium potatoes
1/2 cup melted margarine
1 can cream of chicken soup
1 cup sour cream
1/3 cup shredded onion
1/2 cup shredded cheddar cheese

Cook potatoes in jackets until cool and grate into a 9 by 3 baking dish. Combine margarine, cream of chicken, sour cream, onions, and cheddar cheese. Pour over potatoes and mix lightly. Bake at 350 degrees for 30 minutes. For the last 10 minutes, top with butter and cornflakes.

Chicken Salad

This is Bardella Barker Marshall's recipe:

1 1/2 cups chopped celery
8 hard boiled eggs
2 boiled chickens

Mix all together with miracle whip.

Hot Fudge Sauce for Ice Cream

This is Elaine Wayment Smith's recipe:

1/2 cup karo syrup
1/2 cup condensed milk
1 large hershey bar

Melt chocolate and add karo. Cook until creamy. Take off stove to add milk then cook again until creamy. Cook in double broiler.

Mexican Salsa Sauce

This is my aunt Elaine's recipe:

24 medium tomatoes that have been washed, scalded, peel and quartered.

Cook tomatoes for about 1 hour. Don't over cook. While cooking, skim off 3 cups juice.

Add:

3 chopped large onions
1 sweet red bell pepper
3 large green bell peppers
2 anaheim peppers
2 small jalapeno peppers, (take seeds and veins out)
1 clove of fresh garlic, chopped.
1 yellow pepper, chopped

Cook everything for 1 hour. Cook down juice.

Then add:

3 tbsp sugar
5 tbsp brown sugar
1/4 cup cider vinegar
6 tsp salt

Cook another 1/2 hour. Put in sterile jars and seal. Be sure to boil lids ten minutes before putting on to seal.

Beef Jerky

1 1/2 lbs steak
1/3 tsp salt
1/4 cup soy sauce
1 tsp liquid smoke
1 tsp onion powder
1/4 cup worcestershire sauce

Marinate overnight. Cook on cake rack in electric fry pan all night at low setting.

Emerald Salad

1 package lemon jello
1 package lime jello
2 cups of boiling water or pineapple juice
1 cup crushed pineapple
1 cup mayonnaise
1 cup cottage cheese
1 cup evaporated milk
1 cup walnuts
1 grated carrot

Dissolve jellos into water or pineapple juice. Let set just hard enough to beat. After beating, add crushed pineapple, mayonnaise, cottage cheese, evaporated milk, nuts, grated carrot. Put in cake pan. Serve on lettuce with a bit of salad dressing on top.

Seafood Soup

1 can cream of shrimp soup
1 cup celery, chopped
1 can evaporated milk
1 can clams
3 to 4 potatoes, cooked and sliced.

Cook, stirring until hot. then serve.

Fruit Salad Dressing

This is Deena's recipe:

1/2 cup pineapple juice
1 1/2 tbsp corn starch
1/4 cups sugar
dash of salt
2 tbsp lemon juice
1/2 cup cream

Cook pineapple juice, corn starch, sugar, and salt. Add lemon juice. Whip cream thick and add to mixture.

Date Cake

2 1/2 cups dates, cut fine
1 1/2 cup hot water
1/2 cup shortening
1 1/4 cup sugar
1 egg
1 cup walnuts
1 tsp vanilla
2 cups flour

Mix dates, shortening, sugar, and hot water and let cool. Beat egg lightly, put soda in egg. Add to date mixture. Then add nuts, flour, and vanilla. Bake at 350 degrees.

Sauce for Frying Chicken

1 cup vinegar
1 cup water
1 stick of butter or margarine
1 tsp salt.

Baste on chicken and fry in broiler.

Taco Filling

This is Lynn Wilson's recipe:

Mild green taco sauce
Taco shells
Grated Cheese
Lettuce
Tomatoes

Parsley Sauce

2 tbsp butter
2 tbsp flour
1 cup chicken stock
2 tbsp finely chopped parsley
2 tsp lemon juice

In heave saucepan, melt butter. Remove from heat and stir in flour. Pour in chicken stock all at once. Beat until well blended. Return to low heat and cook till it comes to boil and is smooth and thick. Simmer 2 to 3 minutes. Add lemon juice, parsley, and pour sauce over fish. Makes about 1 1/2 cups.

Beef Burritos


1 lb Hamburger
2 cups Minute Rice, cooked
1 package Burrito Seasoning
Tortillas

Cook hamburger until brown in electric skillet. Add cooked minute rice. Add package of burrito seasoning. Fill tortillas. Add sour cream, guacomole, black beans, or salsa, if desired.

Banana Oatmeal Cookies

1 1/2 cup flour
1 cup sugar
1/2 tsp baking soda
1 tsp salt
3/4 tsp cinnamon
3/4 cup shortening
1 egg, well beaten
1 cup mashed bananas
1 3/4 cup quick oats

Sift dry ingredients into a bowl. Cut in shortening. Add rest of ingredients and beat until blended. Drop by teaspoonfuls onto greased cookie pans. Bake at 400 degrees for 10 minutes.

Batter for Deep Frying

Beat an egg white until foamy. Fold in 1/2 cup flour and 1 tsp salt. Thin with 1/2 cup cold water. Use on onion rings, shrimp, or everyday pot frying.

Chinese Cabbage

1 tsp salt
1/3 cup soy sauce
2/3 cup water
1 cup and 1/2 tsp sugar
Fresh ginger
1 head of cabbage or romaine lettuce.
1 lb hamburger

Dissolve together. Brown hamburger and simmer with sauce mixture. Add lettuce. Cook 10 to 15 minutes. Don't over cook.

Poppy Seed Bread

This is RuthAnn's recipe:

3 cups flour
2 1/2 cups sugar
1 1/2 cup milk
1 cup oil
3 eggs
1 1/2 tbsp poppy seeds
1 1/2 tsp salt
1 1/2 tsp baking powder
1 1/2 tsp vanilla
1 1/2 tsp butter flavoring
1 1/2 tsp almond flavoring

Makes 2 loaves. Preheat oven to 350 degrees. Bake for 45 minutes. Cool for 5 minutes, before put on glaze. Cool for 10 minutes and tap cake out of pan.

Glaze:

1/4 cup orange juice
3/4 cup sugar
1/2 tsp vanilla
1/2 tsp butter flavoring
1/2 tsp almond flavoring

Taco Salad

1 chopped onion
4 fresh tomatoes
1 head of lettuce
4 oz. grated cheddar cheese
8 oz. Thousand Island or French dressing or 4 oz. each
1 bag tortilla chips, broken in pieces
Salt and pepper
1 1/2 lb hamburger
1 can (15 oz) Kidney beans

Brown hamburger and add kidney beans, simmering for 10 minutes. Mix into other ingredients and garnish with gaucomole and sour cream.

Honey Candy

1 1/2 cup sugar
1/2 cup water
1 1/2 cup honey
1 tbsp butter
Pinch of baking soda

Boil until it gets hard in cold water. Add soda and butter. Pour into greased pie tins. Stretch as soon as it is cool enough to handle.

Chocolate Cream Drops

1/2 cup shortening.
1 1/2 cup sugar
2 eggs
1 cup sour cream
1 tsp vanilla
2 3/4 cups flour
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
2 squares unsweetened chocolate
1 cup sliced walnuts

Preheat oven at 400 degrees. Soften shortening. Mix ingredients and chill for a least 1 hour. Form dough into balls. Drop dough, 2 inches apart, onto greased cookie sheets and bake for 8 to 10 minutes. Frost when cool.

Sour Cream Drops

1/2 cup shortening.
1 1/2 cup sugar
2 eggs
1 cup sour cream
1 tsp vanilla
2 3/4 cups flour
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt

Preheat oven at 400 degrees. Soften shortening. Mix ingredients and chill for a least 1 hour. Form dough into balls. Drop dough, 2 inches apart, onto greased cookie sheets and bake for 8 to 10 minutes.

Apple Butter


1 gallon washed quartered apples. Add water to apples. Boil until tender. Cool. Add 3/4 cup Vinegar cider and 5 cups sugar. Add 1 tsp cloves, 3 tsp cinnamon, 1/2 tsp salt. Boil to desired thickness approximately 3 hours. Stir often. Seal while hot.

Refrigerator Roll

This is Elaine's recipe:

1 cup Shortening
1 cup Boiling water
3/4 cup Sugar
2 tsp Salt
7 1/2 cups Flour
1 cup Cold water
4 Beaten eggs
2 cups yeast dissolved in 1/2 cup warm water

Whip shortening and boiling water, until mixture is one. Add sugar, salt, cold water, eggs, and yeast. Stir and add flour. Cover with damp cloth and set in refrigerator at least 1 hour. When ready to shape, place on floured board. Roll dough and cut rolls and place on greased baking sheet. Let rise to double, 2 hours or more. Bake 8 to 10 minutes at 400 degrees.

Chip Dip

1 package Cottage Cheese
1 package Onion Soup
1 pint Sour Cream

Mix together and refrigerate.

Cheese Puff Candy

This is Martha's recipe:

2 cups sugar
1/4 cup water
1/2 lb butter
1/2 lb margarine

Boil ingredients for seven minutes. Pour over Cheese Puffs.

Streusel

Streusel Mixture:
1/2 cup brown sugar
2 tbsp butter or margarine, softened
2 tbsp flour
1 tsp flour
1 tsp cinnamon
1/2 cup chopped walnuts

Batter:
1 1/2 cups flour
2 1/2 tsp baking powder
1/2 tsp salt
1 egg
3/4 cup sugar

Hawaiian Delight

This is Gwen's recipe:

1/2 lb margarine
5 tbsp sugar
2 cups flour
1 tsp vanilla
1 cup coconut

Cream butter and sugar. Add flour, vanilla, and coconut. Shape into rolls. Refrigerate and wrap in wax paper. Slice and place on ungreased cookie sheet. Bake 30 minutes at 300 degrees. Roll in powdered sugar when warm and again when cool.

Cream Cheese Jello Salad

This is Cherie's recipe:

2 packages Lime Jell-o
1 package Lemon Jell-o
5 cups Water
8 oz. Cream Cheese
1 can Pears
1 package Dream Whip

Mix 2 cups water with jello and add 3 cups cold water. Dissolve jello. Stir in cream cheese and pears. Add dream whip.

Sweet and Sour Pork

This is my aunt Vivian's recipe:

Carrots
Green Pepper
Celery
Onions
Pork
1 tbsp Cornstarch
1 tbsp flour
1 egg
1 can pineapple chunks

Put rice on to cook. Saute in butter: carrots, green pepper, celery, onions, until they are basically done. Dip pieces of pork in cornstarch, flour, and egg, and fry.

Sauce:
1/3 cup wine vinegar
1/4 to 1/2 cup sugar
1/2 cup water
1 tbsp cornstarch
1/2 cup ketchup
Tomato sauce to taste

Place veggies on rice. Place chunks of pineapple and pork on veggies. Cover with sauce.

Lemon Cheesecake Filling

3/4 cup sugar
1/4 cup cornstarch
1 cup water
1 tsp grated lemon rind
1/3 cup lemon juice
2 slightly beaten egg yolks
yellow food coloring

Combine sugar, cornstarch, water, lemon rind, lemon juice, egg yolks, and yellow food coloring in saucepan. Cook over medium heat. Stir constantly until thick.

Dutch Oven Cobbler


1 package of cake mix
1 can Peach or Blueberry pie filling
2 tbsp butter
1 cup brown sugar

In dutch oven, line with aluminum foil and grease. Add pie filling. Pour over pie filling, cake mix, brown sugar, and butter. Cook until golden brown.

Chili Sauce

4 tomatoes
4 green peppers
4 large onions
2 cups vinegar
3 cups sugar
1/2 cup salt
3 tsp cinnamon
2 tsp nutmeg

Chop tomatoes, peppers, onions. Add vinegar, salt, sugar, cinnamon, nutmeg.

Steak Diane

1 lb steak
Instant meat tenderizer
1 tbsp butter
1 tbsp vegetable oil
1 can (3 oz) sliced mushrooms
2 chopped green onions
1 tsp dry mustard
2 tbsp lemon juice
1/4 Worcestershire sauce
1/4 tsp salt
1/8 tsp pepper
1/2 tsp cornstarch
1/8 tsp ketchup
1/8 tsp Kitchen Bouquet

Sear pieces of meat with tenderizer, salt, pepper, oil, and butter until cooked rare. Keep warm on hot plate. Add 4 tbsp butter to pan drippings. Saute green onion. Combine broth, mustard, lemon juice, Worcestershire sauce, salt, pepper, cornstarch, and kitchen bouquet. Mix until smooth then add sauteed onions. Stir and cook till sauce thickens. Add mushrooms and spoon over hot steak.

Rocky Road Fudge

1/4 cup Butter or Margarine
1 2/3 cups Sugar
2/3 cup Canned Milk
25 large Marshmallows
1 cup Chocolate Chips
1 tsp Vanilla
1 cup Chopped Walnuts
25 mini Marshmallows

Cook and stir on stove until hot and smooth. Place in glass dish and let set.

Clam Chowder

3 diced potatoes
1 diced stalk of celery
1 diced onion
1 minced clams
2 to 3 strips of raw Bacon
1/2 cup Ham chunks
1 can Evaporated Milk
2 tbsp Flour

Drain clams and use juice in potatoes on stove. Add clams, raw bacon, ham, and flour. Add milk. Do not let it boil. Sprinkle with salt and pepper.

Gingerbread Man


1 cup sugar
1 cup shortening
1 cup molasses
1 cup boiling water
1 tbsp ginger
1 tsp salt
1 tbsp baking soda
2 beaten eggs

Cream sugar, shortening, molasses, water, ginger, and salt. Bring to a boil and remove from stove. Then add soda and let cool. Add eggs and beat. Flour enough for a soft dough. Roll out and cut using gingerbread cookie cutter. Bake at 350 degrees 10-12 minutes, or until crispy.
