Cherry Cream Cheese Pie

This is Elaine Smith's recipe:

2 (8 oz) Cream Cheese
2 cups powdered sugar
1 enveloped dream whip
1 (32 oz) Cherry Pie Filling
1 graham cracker pie crust

Mix together and put into graham cracker crust. Chill in refrigerator. Just before serving, top with a cherry pie filling.

Chicken Enchiladas

1 can Cream of Chicken Soup
1 can Milk
8 oz Sour Cream
12 flour tortillas
Cooked chunks of Chicken
Shredded Cheddar Cheese

Mix soup, milk, and sour cream. Spread a little of soup mixture on bottom of 9 by 13 pan. Spread some soup mixture down center of each tortilla, along with some cheese, and chicken. Roll tortillas and place in pan. Spread remaining mixture over top and then shredded cheese. Bake at 375 degrees until hot.

Chocolate Zucchini Bread

This is my grandmother Cleone's recipe:

1 cup Oil
2 1/4 cups Sugar
3 Eggs
3 cups Flour
1 tsp Baking Powder
1 tsp Baking Soda
1 tsp Salt
2 cups Zuchinni, shredded
3/4 cups Cocoa
1 tsp Vanilla

Cream eggs, sugar, oil and vanilla and blend together. Blend in separate bowl, flour, baking powder, baking soda, and salt. Then add to egg mix. Then add cocoa. Add nuts if preferred. Add zucchini last and mix well. Bake at 350 degrees for 1 hour.

Rice and Chicken Casserole

1 1/3 cup Rice
Chicken
1 small onion
1 can cream of chicken soup
1 can water
2 tsp celery flakes
1 tbsp Parsley
Thyme
Mushrooms


Cook rice and fry chicken. Sprinkle chicken with All Spice, salt and pepper. Add onion and simmer. Add cream of chicken, water, celery flakes, thyme, mushrooms, and parsley. Add rice to chicken mixture and cover. Bake at 400- 250 degrees for 1 1/2 to 2 hours.

Barbecue Beef


Put 3 or 4 lbs Rump Roast in a crock pot with water. Add sliced onion. Cook over night. Start at high temperature, then turn to low until it is done. Then take off fat, break apart, and add barbecue sauce and heat up.

Beef Stroganoff


1 lb ground Beef
1 can cream of chicken soup
1 onion
1 can sliced mushrooms
1 can sour cream
1 package of noodles or rice
1/2 tsp Salt

Cook onion until tender, but not brown. Brown ground beef. Add onions, soup, mushrooms, salt, and sour cream. Heat but do not boil. Pour over noodles or rice.

Peanut Brittle

Pinch of salt
1 cup Sugar
1 tsp Vanilla
1 tsp Baking Soda
1 cup Peanuts
1/2 cup Light Corn Syrup
1 tsp Butter

Combine peanuts, sugar, corn syrup, and salt. Microwave on high 7 to 8 minutes, stirring thoroughly after the first four minutes. Add butter and vanilla. Mix completely and microwave on high for 1 to 2 minutes longer. Add baking soda and mix until light and frothy. Pour onto light buttered cookie sheet. Let cool 30 minutes to 1 hour. Break into pieces and eat.

Make Your Own Bisquick


8 cups Flour
1 tbsp Salt
2 cups Instant Dry Milk
3 tbsp Baking powder
1/4 cup Sugar
1 1/2 cups of shortening

Stir together all ingredients, except shortening, and sift 3 times in a large ball. Cut in shortening. Store in air tight container.

Apple Pudding

2 cups Sugars
1 cup Shortening
3 Eggs
2 cups Flour
2 tsp Cinnamon
2 tsp Nutmeg
1/2 tsp Salt
2 tsp Baking soda
4 cups raw Apples, grated
1 cup chopped walnuts
1 jar Caramel sauce


Cream sugar and shortening. Add eggs, flour, cinnamon, nutmeg, salt, baking soda, apples and nuts. Bake in 12 by 16 pan at 350 degrees for 35 minutes. Top with caramel sauce.

Chicken Casserole

3 pounds Chicken
1 pint Sour Cream
1 can Cream of Chicken soup
1 can Cream of Mushroom soup
1 box of Stove Top dressing

Cook chicken for 1 hour at 350 degrees. Debone and put on bottom of 9 by 13 inch pan. Mix sour cream with soups. Place on top of chicken. Mix stove top and cook as directed on the box. Place on top of chicken and soup mixture. Cook 45 to 60 minutes at 325 degrees.

Chocolate Crinkles

1/2 cup Shortening
1 2/3 cup Sugar
2 tsp Vanilla
2 Eggs
1/2 cup Milk
2 (1 oz.) square unsweetened chocolate, melted
2 cups Flour
2 tsp Baking Powder
1/2 tsp Salt
1/2 cup Chopped Walnuts

Cream shortening, sugar, and vanilla. Add eggs and unsweetened chocolate. Sift together flour, baking powder, and salt alternately with milk. Add nuts. Chill three hours. Form into balls and roll in powdered sugar. Place on greased cookie sheet 2 to 3 inches apart. Bake at 350 degrees for 15 minutes. Makes 48 cookies.

Corn Dish

This is my aunt Elaine's recipe:

1 package Frozen corn
4 oz Cream Cheese
1 cup Milk
1/2 tsp Spike Seasoning
1 tbsp Minced Onion
1/2 tsp Dill Weed

Rocky Road Candy

12 oz Semi-Sweet Chocolate Chips
1 can Condensed Milk
2 tbsp Butter

Mix together, melt in microwave for 12 minutes. Take out and stir. Add 2 cups of peanuts.

Apple Crisp Topping

1 cup Flour
1 tsp Baking Powder
1 Egg
Cinnamon
1 1/2 cup Sugar
3/4 tsp Salt
1/3 cup Vegetable Oil

Stir all ingredients, except oil, with fork. Sprinkle over sliced apples. Sprinkle with cinnamon. Pour oil over all. Bake 40-45 minutes at 350 degrees.

Caramels

This is my aunt Elaine's recipe:

2 cups Sugar
1 cup Clear Honey
1 can Condensed Milk
1/4 lb Butter

Pour in heavy pan, stirring the whole time and Boil 9 minutes. Stir constantly and cook on medium heat. Add nuts. Pour in buttered dish.

Cream Cheese Fudge

1 small package of Cream Cheese
1 tsp Vanilla
1 square Margarine, melted
1 package of Powdered Sugar
1 cup Walnuts
1/4 cup Cocoa

Mix cream cheese, vanilla, and margarine. Add powdered sugar, nuts, and cocoa. Put into a roll and put in refrigerator over night. Take out and slice.

Molasses Sugar Cookies

3/4 cup Shortening
1 cup Sugar
1/4 cup Molasses
1 Egg
2 cups Flour
1/2 tsp Cloves
1/2 tsp Salt
2 tsp Baking Soda
1/2 tsp Ginger
1 tsp Cinnamon

Mix together shortening and sugar. Add molasses and egg, mixing well. Sift together flour, cloves, salt, baking soda, ginger, and cinnamon. Add to shortening mixture. Roll balls into sugar. Put them on cookie sheet 2 inches apart and bake at 375 degrees for 7 to 9 minutes.

Pineapple Orange Salad

2 cups Whipped Cream
1 cup Sour Cream
1 large can Pineapple chunks
1 package Mini Marshmallows, colored
1 cup Coconut Flakes
2 small cans Mandarin Oranges

Drain Pineapple and Oranges. Combine all ingredients and mix well. Chill in refrigeratory overnite for at least 5 hours.

Condensed Milk Mixture

2 cups Powdered Milk
1/2 cup Water
1 cup Sugar

Mix in blender.

Carrot Coconut Cookies

1 cup Shortening
1 cup Mashed Cooked Carrots
2 cups Flour
1/2 tsp Salt
3/4 cup Sugar
2 Eggs
2 tsp Baking Powder
3/4 cup Coconut

Bake at 400 degrees for 10 to 12 minutes.

Muffins

2 cups Flour
1/2 tsp Salt
2 1/2 tsp Baking Powder
1/4 cup Sugar
1 Egg, beaten
3/4 cup and 2 tbsp Milk
1/4 cup Oil

Preheat oven to 450 degrees. Bake 425 degrees for 20-25 minutes. Makes 12 muffins.

Desert Pizza

1 package (20 oz.) Refrigerated Cookie Dough
2 cups assorted fruit
3 cups thawed cool whip

Heat oven for 350 degrees. Press dough evenly into 12 inch Pizza pan. Bake 15-20 minutes or until golden brown. Cool in pan on wire rack. Place cookie crust on serving plate. Spread cool whip on cookie crust. Garnish with fruit and serve. Refrigerate after serving.

Buttermilk Ranch Dressing

1 quart Mayonnaise
1 1/2 to 2 cups Buttermilk
1 tsp Garlic Powder
1 tsp Onion Salt
1 tbsp Accent Salt
2 tbsp Dried Parsley
A dash of Pepper

Yams

3 cups Cooked Yams
1/4 cup Butter
3/4 cup Brown Sugar
3 TBSP Milk
1/4 tsp Salt
1/2 tsp Lemon Rind
8 Marshmallows
1 cup Corn Flakes

Cook and mash yams, adding butter, brown sugar, milk, salt, and lemon rind. Shape into ball, placed on greased pan and place marshmallow in center. Cover and roll in flakes.

Oatmeal Cake

1 cup Quick Oats
1 1/2 Cup Boiling Water
1 cube Margarine
1 tsp Vanilla
1 cup Sugar
1 cup Brown Sugar
3 Eggs
1 1/2 cup Flour
1 tsp Baking Soda
1/2 tsp Salt
1 tsp walnuts

Pour boiling water over the oats and add margarine, let stand for 20 minutes. Then add vanilla, sugar, brown sugar, and eggs. Sift together, flour, soda, salt, and nuts.
Bake at 350 degrees for 30 to 35 minutes. Frost cake.

Parmesan Chicken

This is our friend DiAnn's recipe:

1 cup Crushed Ritz Crackers
1 tbsp Parmesan cheese
1/2 tsp Salt
1/4 tsp Garlic Powder

Dip chicken (breasts or strips) in eggs. Then into cracker mixture. Drizzle butter over the top. Bake at 400 degrees about 35 minutes.

Root Beer Frosty

For each serving, beat together 1/2 cup cold milk, 1/2 cup root beer, and 1 scoop of vanilla ice cream.

Pumpkin Chocolate Chip Cookies

1/2 cup Shortening
1/2 cup walnuts
1 tsp Baking Soda
1 tsp Cinnamon
1/2 tsp Allspice
1 cup Pumpkin
2 1/2 cups Flour
1/2 tsp Cloves
1 Egg
1 tsp Baking Powder
1 tsp Vanilla
1 tsp Salt
1/2 cup Sugar
1 package Chocolate Chips
1/2 tsp Nutmeg

Combine shortening and sugar, adding eggs, pumpkin, and vanilla. Beat well. Mix all the rest of the ingredients together, then add them to shortening mixture. Fold in nuts and chips. Put onto greased cookie sheet. Bake at 375 degrees for 10 minutes.

Grilled Chicken



1 cup Water
1 square Melted Butter
1/2 tsp or less Pepper
1 cup Vinegar
1 tsp Salt

Mix together. Put chicken in it and put on grill. Keep brushing on chicken. Keep turning chicken over. 1/2 hour cooking time.

Raspberry Frosty

For each serving, beat together 2/3 cup cold milk, 1/3 cup frozen raspberries, and 1 scoop of vanilla ice cream.

Apple Punch

2 quarts Apple cider
16 tbsp Lemon juice
10 whole Cloves
2 sticks of Cinnamon
1 small can of Frozen Orange Juice
1 quart Water
1 stick Ginger

Boil water and sugar for 5 minutes. Add cider, lemon juice, and orange juice. Put spices (except Cinnamon) in a bag and simmer for 30 minutes. Add cinnamon.

Danish Pancakes


2 cups Flour
1 1/2 tsp Baking Soda
1 tbsp Sugar
2 Eggs
1 tsp Baking Powder
2 cups Buttermilk
1/2 tsp Salt

Beat dry ingredients with eggs, then add flour and buttermilk. Fill griddle cups 1/2 full of vegetable oil. Let oil boil before adding batter. Don't boil too long.

Lemonade

1 cup Sugar
7 cup Water
1 cup Lemon Juice

Combine sugar and 1 cup water in saucepan. Simmer 5 minutes or until sugar is dissolved. Cool. Add remaining water and lemon juice. Sweeten with sugar to taste. Pour over ice. Garnish with cherries, strawberries, or mint. Makes about 8 cups.

Peanut Butter Cups

This is my aunt Vivian's recipe:

6 whole Graham Crackers, crushed
1 cup Peanut Butter
1 1/2 cups Powdered Sugar
1/2 cups Melted Butter
1 package Chocolate Chips

Mix ingredients together. Spread on cookie sheet and chill. Take chips and melt over low heat or using a double boiler. Spread over peanut butter mix. Cool and cut into squares.

M & M Cookies

1 cup Shortening
1 cup Brown Sugar
1/2 cup Sugar
2 tsp Vanilla
1 1/2 cups M & M's
2 eggs
2 1/4 cups Flour
1 tsp Baking Soda
1 tsp Salt

Blend shortening, brown sugar, and sugar in large bowl. Beat in vanilla and eggs. Sift remaining dry ingredients together. Add to sugar and egg mixture, blending well. Stir in M & M's. Drop from teaspoon on greased cookie sheet, decorating the tops with leftover M & M's. Bake at 375 degrees for 10 minutes, or until golden brown. Remove cookies with spatula to wire racks. Cool completely. After baking, some candies may slight be cracked. This adds texture and interest to cookies, still having the same delightful flavor.

Pineapple Cake

2 cups Flour
2 cups Sugar
1 (20 oz.) Can Crush Pineapple in Juice
2 tsp Baking Soda
2 Eggs
1 tsp Vanilla

Mix together and put in 9 by 13 greased pan. Bake at 350 degrees for 40 to 45 minutes.

Frosting:

8 oz. Cream Cheese
1 stick Margarine
1 1/2 cup Powdered sugar
1 tsp Vanilla

Mix together and spread over cake.

Vegetable Dip

Veggie Dip:

This is my Aunt Sharol's recipe.

8 oz Sour Cream
1 tsp Dried Onion
1 tbsp Beau Mondi
4 oz Mayonnaise
1 tbsp Parsley Flakes
1 tbsp Dill Weed

Mix ingredients and chill. I usually serve with baby carrots, broccoli, cauliflower, and celery.

Orange Twists

8 Texas rolls or 1 loaf frozen bread dough
3 tbsp Butter, softened
1 tsp Cinnamon
Grated peel of 1 Orange
2 tbsp Orange Juice, concentrated
1/3 cup Sugar

Orange Glaze:
1 cup Powdered Sugar
2 tbsp Orange Juice, concentrated
1 tbsp Butter

Thaw dough into a ball until warm and bubbly. Roll dough into a 15 by 15 inch square. Spread with softened butter and grated orange peel. Combine orange juice concentrated, sugar, and Cinnamon. Spread over entire square, leaving no margin. Fold dough in half. Using pizza cutter, cut 3/4 inch strips. Twist each strip several times and place on greased cookie sheet. Allow strips to rise for 20 minutes. Bake at 350 degrees for 15 to 20 minutes or until lightly brown. Frost with orange glaze. Makes 15 twists.

Roast and Gravy

This is RuthAnn's recipe:

1 Roast
Basil Leaves
Onion Salt
Salt and Pepper

Put roast in pan. Sprinkle onion salt, basil leaves, salt, and pepper on both sides. Brown both sides of roast on stove. Add enough water to make 1 inch in pan. Add cut up carrots and/or potatoes if desired. Bake at 290 degrees for 3.5- 4 hours, or until tender. Make sure water is always in it.

Gravy:

1 cup Water
2 tbsp Flour
Water from Roast Pan

Mix water, with flour, then adding to water from Roast pan. Cook ingredients on stove, stirring. If too thick, add more water. If too thin, add more flour.

Pumpkin Rolls

4 Eggs
2 cups Sugar
2 cups Flour
2 tsp Cinnamon
2 cups Pumpkin
1 cup Vegetable Oil
2 tsp Baking Soda
1/2 tsp Salt

Beat eggs and sugar until fluffy. Add oil, pumpkin, and then dry ingredients. Bake at 350 degrees for 35 minutes; layers 40 to 45 minutes.

Icing:

8 oz. Cream Cheese
1 box Powdered Sugar
1 cup Pecans
1 cube Margarine
1 tsp Vanilla

Soften margarine and cream cheese, beating until light. Add remaining ingredients. Make half the recipe for oblong cake.

German Chocolate Frosting

This is Vivian Wayment's recipe:

6 oz Evaporated Milk
1 beaten egg
1/4 cup butter
2 3/4 cups sugar
1 tsp vanilla
1 cup walnuts
1 cup coconut

Place on stove on medium heat and cook until thick, about 12 minutes. Add vanilla. coconut and nuts.

Pineapple Frosty

2 large cans Pineapple Juice
3 quarts any flavor sherbet
3 quarts of 7-Up

Mix the pineapple juice and sherbet in a mixture and then pour into 7-Up. Serves about 20.

Chocolate Chip Cookies

2/3 cup Shortening
1/2 cup Brown Sugar
1 cup Sugar
2 Eggs
2 tsp Vanilla
2 1/4 cups Flour
1 tsp Baking Soda
1/2 tsp Salt
6 oz. Chocolate Chips

Combine shortening, sugars, eggs, and vanilla, mixing well. Mix in flour, salt, and baking soda. Stir in chips and nuts, if desired. Drop on lightly greased cookie sheet. Bake at 350 degrees for 8- 10 minutes. Cookies will be chewy if taken from the oven, when they look like they need to bake a little longer.

Texas Sheet Cake

1 cup Water
2 Sticks Margarine
4 tbsp Cocoa
2 1/2 cup Flour
2 cup Sugar
1/2 tsp Salt
1 tsp Baking Soda
2 Eggs
2 tbsp Lemon juice plus enough milk to make 1/2 cup
1 tbsp Vinegar

In saucepan, cook water, margarine, and cocoa until they boil. Mix dry ingredients. Mix eggs and milk with flour mixture. Add cocoa mixture and vanilla and mix well. At the very last, add vinegar. Pour into greased jellyroll pan. Bake at 375 degrees for 20 minutes. Cool 10-30 minutes and frost.

Frosting:
1 cube Margarine
5-6 tbsp Milk
4 tbsp Cocoa
4 cups Powdered Sugar

Heat margarine and milk and add cocoa. Pour over powdered sugar and mix well. Frost cake.

Banana Cake

2 1/4 cup Flour
1 tsp Baking Soda
1 tsp Baking Powder
1 tsp Salt
1/2 cup Oil
1/2 cup Buttermilk
1 1/4 cup Mashed Bananas
2 Eggs
1 1/4 cup Sugar

Mix dry ingredients except sugar. Add oil, milk, and mashed bananas. Beat eggs and add sugar gradually. Add to first mixture. Bake at 350 degrees about an hour in greased and floured cake pan.

No Fail Pie Crust

2 1/2 cup Flour
1 cup Shortening
1 tsp Salt
1 Beaten Egg
1 tbsp Vinegar
1/4 cup cold Water

Mix flour, shortening and salt with fork until pieces are the size of small peas. Mix egg, vinegar, and water, and add to flour mixture, mixing well. Let set 30 minutes and roll out. Makes 1 two crust pie and 1 pie shell. Bake pie shell at 450 degrees for 10 minutes. Bake 2 crust pie for pie directions with pie.

Tuna Casserole

Tuna Casserole

2 cups Egg Noodles, cooked and drained
1 can Cream of Mushroom Soup
1 (7 oz.) can Tuna Fish
Milk


Place one layer of noodles into greased one quart casserole pan. Cover with 1/2 can of tuna, adding another layer of noodles and tuna. Top with noodles. Mix mushroom soup with with one soup can full of milk and pour over noodles and tuna mixture.  Bake at 350 degrees for 30 minutes. Makes 4 servings.

Applesauce Cookies

1/2 cup Shortening
2 Eggas
1 tsp Baking Soda
1/2 tsp Salt
1/2 tsp Cloves
1 tsp Nutmeg
1/2 tsp Cinnamon
2 1/2 cups Flour
1 cup Sugar
1 cup Applesauce
1 cup Walnuts
1 package Chocolate Chips

Cream shortening and sugar. Add eggs and applesauce. Mix all dry ingredients. Add to dough, then add chocolate chips and nuts. Drop by spoonfuls onto a greased cookie sheet and bake at 400 degrees for 9-12 minutes.

Banana Nut Bread

This is Lois Archibald's recipe:

3 Bananas
1 cup Sugar
2 cups Flour
1 tsp Baking Powder
1 tsp Baking Soda
1/2 cup Chopped walnuts
2 Eggs
1/2 tsp Salt
1/2 cup Shortening
1 tbsp Warm Water

Mash bananas and add sugar. Let stand about 15 minutes. Add shortening to banana mixture. Beat and add eggs. Add all dry ingredients, except baking soda. Add chopped walnuts. Dissolve baking soda in warm water, and add. Stir only until mixed. Bake in greased loaf at 350 degrees for about 50 minutes.

Cheese Sauce

Mix together an mild green chile salsa and Velveeta cheese, melting in pan.

Pumpkin Bars

4 eggs
1 cup oil
2 cups Sugar
1 tsp Vanilla
2 cups Pumpkin
2 1/4 cups Flour
1 tsp Baking Soda
2 tsp Cinnamon
1 tsp Salt

Beat eggs. Add sugar, oil, vanilla, and pumpkin. Add dry ingredients. Bake in a greased larger cookie sheet at 350 degrees for 20 to 25 minutes. Frost bars with Cream Cheese frosting.

Bread Sticks

1 tbsp Yeast
1 1/2 cup Warm Water
2 tbsp Sugar
1 1/2 tsp Salt
3-5 cups Flour
1/2 cup Melted Margarine

Dissolve yeast in water and add sugar and salt. Add flour until not sticky, and stir 3 minutes. Let rest 10 minutes. Melt margarine on cookie sheet. Roll doll into 6 by 20 inch rectangle. Sprinkle with garlic salt and Parmesan Cheese. Cut into strips. Let rest on sheet 15-30 minutes. Bake 20 minutes at 375 degrees.

Caramel Rolls

1 1/2 cup Pecan Pieces
1 cup Brown Sugar
1 cup Butter, melted
20 frozen Dinner Rolls
1 (3.75 oz) Package of Instant Butterscotch Pudding Mix

Spread pecans on bottom of a 9 by 13 inch pan. Combine brown sugar and pudding mix, and sprinkle over pudding mix. Pour butter over sugar mixture and place rolls on top. Let rise overnight. Bake at 375 degrees for 20-30 minutes. Turn out onto serving platter.

Chocolate Marshmallow Treat

This is my Grandmother Cleone's recipe:

1 large package Milk Chocolate Chips
1 cube Margarine
1 egg
Pinch of Salt
1 tsp Milk
1 tsp Vanilla
1 cup Powdered Sugar
1 package Colored Marshmallows
1/2 cup Chopped walnuts
1/2 cup Coconut
1/2 cup Graham Cracker Crumbs

Blend chocolate chips and margarine together. Melt over warm water. Beat egg, salt, milk, vanilla, and powdered sugar. Add to cool chocolate mixture. Pour over marshmallows, nuts, coconut, and graham cracker. Let stand 14 minutes. Roll 10-12 graham crackers until finely crushed. Spread on large piece of wax paper. Divide mixture into half. Let stand 15 minutes. Form into log rolls in cracker crumbs wrapped in wax paper. Keep in refrigerator until read to serve.

Fruit Dip

1/3 cup Honey
8 oz Sour Cream

Mix well and chill for 1 hour. Serve with fresh fruit.

Chicken & Broccoli Casserole

2 whole Chicken breasts, cooked and cubed
1 large bundle Broccoli, cooked
1 can Cream of Chicken soup
1/2 cup Milk
1/4 cup Mayonnaise
1/4 cup Miracle Whip
1 cup Grated Cheddar Cheese
2 tsp Lemon Juice

Combine soup, milk, mayonnaise, and miracle whip in saucepan. Heat, then add cheese and lemon juice. Arrange broccoli and chicken in layers in large casserole or rectangular glass pan. Pour sauce over, cover, & back at 350 degrees for 45 minutes.

Limeade

3/4 cup Sugar
6 cup Water
1 cup Lime Juice

Combine sugar and 1 cup water in sauce pan. Simmer 5 minutes or until sugar is dissolved. Cool. Add remaining water and lime juice. Sweeten to taste, with additional sugar, if desired. Pour over ice. Makes about 8 cups.

Lemon Frozen Crunch

This is my great grandmother Bardella's recipe:

Crust:

2 cups Crushed Graham Crackers
1/4 cup Melted Butter
2 tbsp Sugar

Filling:

1 cup Evaporated Milk
1/3 cup Lemon Juice
2 Eggs
1/2 cup Sugar
1/2 tsp Salt
1 tbsp grated Lemon Rind

Mix graham crakers, butter and sugar together in bowl. Chill milk whip till stiff. Add lemon juice and whip very stiff. Beat eggs, sugar, and salt until thick and creamy. Fold in whipped milk and grated lemon rind. Put crust into pan. Add lemon mixture over crust. Sprinkle top with crust mix. Refrigerate.

Dinner Rolls

This is Lael Wall's recipe:

2 tbsp Dry Yeast
2 cup Warm Water
1/2 cup Sugar
1/3 cup Melted Brother
2 1/2 tsp Salt
2/3 cup Nonfat Dry Milk
5- 6 cups Flour
1 Egg

Combine dry ingredients. Add water, butter, and egg. Mix seven minutes in bread maker. Put into oiled bowl. Let raise until doubled. Divide dough in half and roll out. Let raise till doubled again. Use dental floss to cut bread into rolls. Cook at 375 degrees for 9 to 10 minutes. Can use this dough to make cinnamon rolls and breadsticks.

7-Up Salad

2 small packages Lemon Jell-O
2 cups Boiling Water
2 cup Chilled 7-Up
1 cup Mini Marshmallows
2 Sliced Bananas
1 (20 oz) can Crushed Pineapple

Topping

1/2 cup Sugar
2 tbsp Flour
1 cup Pineapple Juice
1 Beaten Egg
2 tbsp Margarine or Butter
1 cup Whipped Cream

Dissolve Jell-O in boiling water in 9 by 13 pan. Add 7-up. Drain pineapple, but reserve juice for topping. Add pineapple, bananas, and marshmallows. Set. After set, Cook sugar, flour, juice, and egg until thick. Stir in butter. Cool, fold in whip cream. Add topping to jell-o

Salsa

5 cans stewed tomatoes
1/2 red pepper
3 tbsp Cilantro
1/2 green pepper
1/2 jalapeno

Blend 1 can tomatoes, peppers, and cilantro into a bowl. Blend together 4 cans of tomatoes and mix together. Shake, do not stir.

Salad Dressing

This is my great grandmother Bardella's recipe:

1 large onion, grounded
1 cup Ketchup
1 cup Oil
1/2 cup Vinegar
1 tsp Salt
1/2 cup Lemon Juice

Mix all together and keep in refrigerator.

Jell-O Salad

1 small can Crushed Pineapple
1/2 cup Sugar
1 package Lemon or Orange Jell-O
1 cup Water
1/2 cup Walnuts
1 cup Cheddar Cheese
1 cup Whipped Cream

Bring the pineapple and sugar to a boil, then add the jell-o and water. Cook until dissolved. Chill until it starts to set and then add nuts, cheese, and whipped cream. Refrigerate before and after serving.

Lemon Bars

1 1/2 Cups plus 3 tbsp Flour
3/4 cup Margarine or Butter
1 1/2 cups Sugar
1/2 cup Lemon Juice, from Concentrate
1/2 cup Powdered sugar
4 eggs
1 tsp Baking Powder

Preheat oven to 350 degrees. In bowl, combine 1 1/2 cups flour and powdered sugar. Cut in margarine until crumbly. Press onto bottom of lightly greased 9 by 13 inch baking pan and bake 15 minutes. In bowl, combine eggs, sugar, baking powder, lemon juice, and 3 remaining tablespoons flour and mix well. Pour over baked crust; bake 20 to 25 minutes or until golden brown. When cool, cut into bars. Sprinkle with additional powdered sugar. Store covered in refrigerator. Makes 24 to 36 bars.

White Cake

This is my great grandmother Bardella's recipe:

1/2 cup Shortening
1 1/3 cups Sugar
2 1/4 cups Flour
3 tsp Baking Powder
1/2 tsp Salt
1 cup Milk
1 tsp Flavoring
3 Egg Whites

Mix all ingredients and pour into 9 by 12 greased pan. Bake at 350 degrees for 25- 30 minutes.

Pistachio Salad

1 large sour cream
1 small package Instant Pistachio Pudding
3/4 cup Shredded coconut
1 small can Crushed Pineapple and Juice

Mix all together and refrigerate 3 hours.

Chicken and Rice Casserole

Chicken and Rice Casserole:

1 1/2 cup White Minute Rice
2 cans Chicken
1 can Cream of Chicken Soup
1 can Cream of Celery Soup
1 (16 oz.) Sour Cream
1/2 stick Butter
1 package Ritz Crackers (Individual)

Preheat oven to 350 degrees. Spread rice on bottom of casserole dish. Spread chicken on top of rice. Mix soups and sour cream together and spread over chicken. Melt butter. Crumble crackers and mix into butter. Sprinkle cracker mixture on top. Bake for 30 minutes.

Pie Crust

This is my grandmother Cleone's recipe:

3 1/2 cups Flour
1 1/2 cups Shortening
1 1/2 tsp Salt
5 tbsp Cold Water
1 egg
1 tsp Vinegar

Mix dry ingredients with a Beaten egg and add water and vinegar. Bake at 400 degrees for about 15 minutes for single crust and 35-40 minutes for double crust.

Clam Dip


Clam Dip for Potato Chips:

1 can Clams
8 oz Cream Cheese
2 tbsp Miracle Whip
2 tsp Lemon Juice
a pinch of garlic salt

Mix together and refrigerate. Serve with potato chips.

No Frost Chocolate Cake

This is my grandmother Cleone's recipe:

1 cup Chopped Dates
1 tsp Baking Soda
1 cup Hot Water
1 cup Shortening or Margarine
1 cup Sugar
2 Eggs
2 cups Flour
1 tbsp Cocoa
1/2 tsp Salt
1/2 cup walnuts
1 (6 oz) package Chocolate Chips

Cream together shortening, sugar, eggs, flour, cocoa, and salt. Then add dates, baking soda, and hot water and mix well. Mix in 1/2 of chocolate chips into batter. Pour into greased and floured 9 by 12 cake pan. Sprinkle with remain chips and nuts. Bake at 350 degrees for 40 minutes.

Cinnamon Rolls

This is my grandmother Cleone's recipe:

2 cups Milk
3 tbsp Yeast
2 eggs
2 tsp Salt
5 cups Flour
1/2 cup Oil or melted Butter

Scald the milk. Soften the yeast and let stand. Beat the eggs. Add eggs, salt, oil, and flour to milk. Mix with spoon until blended. Dough will be light and sticky. Let raise twice. Punch down between raising and roll out on floured board, half at a time. Spread with melted butter and sprinkle with white sugar and cinnamon. Let raise. Bake at 350 degrees until light brown.

Cheesecake

This is my grandmother Cleone's recipe:

Crust:
2 cups Graham Cracker Crumbs
3 tbsp Sugar
2 1/2 tbsp Cinnamon
1 stick of Butter, melted

Filling:
3 (8 oz) Packages Cream Cheese, softened
5 Eggs
1 cup Sugar
1 1/2 tsp Vanilla

Topping:
3 cups Sour Cream
5 tbsp Sugar
1 1/2 tsp Vanilla
1 can Cherry Pie Filling

In a mixing bowl, combine graham cracker crumbs, sugar, Cinnamon, and melted butter. Spread into an 9 by 12 greased glass baking dish. Set aside. In a large mixing bowl, combine cream cheese, eggs, sugar, and vanilla. Beat until creamy. Fill prepared crust. Bake at 300 degrees for 50 minutes. Cool for 10 minutes to allow cheesecake to settle. In another mixing bowl, combine sour cream, sugar, and vanilla. Beat together and pour over cheesecake. Bake at 300 degrees for 10 minutes. Allow to thoroughly cool and refrigerate. Just before serving, add fruit pie filling on top. Makes 12 servings.

Microwave Brownies

2 eggs
1 cup sugar
1/2 tsp vanilla
1/2 cup butter (melted)
3/4 cup flour
1/3 cup cocoa

In a small bowl, beat together eggs, sugar, salt, and vanilla for 1 minute until light. Add melted butter and continue beating until blended. Mix in flour and cocoa at low speed. Spread into greased 8 inch round microwave dish. Microwave on high for 4- 4 1/2 minutes, rotating dish 1/2 turn every two minutes. When done, top look dry and will spring back when lightly touched. Sprinkle with powdered sugar.

Peanut Butter Cookies

This is my grandmother Cleone's recipe:

1 cup Shortening
1 cup Sugar
1 cup Brown Sugar
3 Eggs
1 cup Peanut Butter
3 cups Flour
2 tsp Baking Soda
1/4 tsp Salt
1 tsp Vanilla

In a mixing bowl, cream shortening, sugar, and brown sugar together. Then add peanut butter and mix well. Add flour, baking soda, salt, and vanilla. Roll dough into balls and place on a greased cookie sheet. Press with a fork. Bake at 400 degrees for 10 minutes. Do not overbake.

Chicken Stir Fry

3 Boneless Skinless Chicken Breast, thawed and diced
1 Bag Carrots or Broccoli, Frozen
2 Cups Minute Rice
1 Bottle Soy Sauce

In an electric skillet, spray with cooking spray and add diced chicken. Cook on medium heat until sides turn tan. Add frozen veggies and stir until soft. Add rice and soy sauce to taste and stir. Then Serve.

Lemon Cake

1 lemon Cake mix
1 (3 oz.) Instant Lemon Pudding
1/3 cup Oil
2 eggs
1 cup Water
1/2 cup Powdered Sugar
4 tbsp Lemon Juice

Mix ingredients and pour into 2 well-greased loaf pans. Bake at 350 degrees for 35-40 minutes. Cool in pan, then top with glaze of powdered sugar and lemon juice.

Custard

This is my great grandmother Bardella's recipe:

4 Eggs
1/2 cup Sugar
1/4 tsp Salt
1 tsp Vanilla
1 quart Milk

Beat eggs, sugar, salt, and vanilla together. Scaled milk in double broiler. Slowly add other ingredients to scalded milk, put into greased baking cups. Bake at 350 degrees for 40 minutes. Test with knife to see when done. Knife should come out clean.

Macaroni and Shrimp Salad


This is Cleone Marshall Wayment's recipe.

1 box small shell macaroni
2 cans small shrimp
8-10 eggs
2 cups Miracle Whip
1/2 tsp Onion Salt
1/2 tsp Celery Salt

Cook the macaroni according to the box. In a separate, cook 8-10 eggs for 15 minutes after they start to boil. Refrigerate eggs and macaroni until cool. Peel eggs (save 4-5 of the middle pieces of each egg to put on top of salad). Cut all the rest of the eggs into bite-sized pieces. In a bowl, mix miracle whip, onion salt, and celery salt. Put drained macaroni into large bowl and add miracle whip mix, stirring. Add more miracle whip if dry. Add more onion salt or celery salt for taste. Add cut-up eggs and mix. Drain the shrimp and run water through them. Add the drained shrimp to the macaroni and stir. Level salad with spoon. Put middle pieces of eggs on top of salad and put paprika, salt, and pepper on top.

Raspberry Pineapple Drink Mix

2 TBS Raspberry Extract
1 Container of Frozen Pineapple Juice, concentrate
6 Cups of Water
2 Cups of Sugar or Artificial Sweetener

Pour the water in a sauce pan. Put stove on high. Add the sugar or sweetener, stirring until it dissolves. Add the thawed Pineapple juice, stirring until well blended. Add the Raspberry extract and stir. Then put in pitcher and refrigerate for at least 4 hours. To drink, add three tablespoons of mix for every glass of 8 oz. water and stir.

Bacon Potato Soup

1 package sliced bacon, cut into small pieces
8- 10 medium potatoes, peeled and cut into small pieces
2 cups Shredded cheddar cheese
1 chopped Onion
Salt and pepper to taste.

Thickening:
1/2 cup flour
1 cup water.

Fry bacon pieces until crisp. Drain grease and set bacon aside. Cook potatoes and onions in enought water to cover them in the same pan, so the bacon flaver cooks into the broth. Make thickening, by mixing water and flour. When potatoes are tender, add thickening, cheese, bacon, salt and pepper.

Cream Puffs

Shrimp Cream Puffd:

This is my grandmother Norma's recipe:

4 large eggs
1 cup flour
1 cup water
1/2 cup butter
1 tsp sugar
1/8 tsp salt

Preheat oven to 425 degrees. Add water, butter, sugar, and salt to a sauce pan and heat on medium until butter is melted. Bring to rolling boil. Add flour all once. Beat with wooden spoon. Stir over medium heat until it cleans pan. Place in large mixing bowl. Beat 1 minute and add eggs all at once. Beat on medium speed 4 minutes. Roll into ball, 1/2 tsp on ungreased cookie sheet and bake 20 minutes. Take out and let cool completely before taking them off the sheet. If they are not cooled, they will fall.

Filling:

1 can Shrimp
1 (8 oz.) Cream Cheese
1 (3 oz.) Cream Cheese
1 tbsp Finely chopped Green Onion
1/2 cup Finely chopped Celery
1/4 cup Evaporated milk
1 Tbsp Lemon Juice
1/2 tsp Worcestershire Sauce

Mix all together and cut cream puffs in half, adding filling to each one. Refrigerate.

Divinity

This is my Grandmother Cleone's Recipe:

2 Cups Sugar
1/2 cup White Karo Syrup
1/2 cup Water
2 Egg Whites= beaten until soft
1 tsp Vanilla
1 cup Walnuts

Put water in pan with Karo and bring to boil. Add sugar and keep stirring until dissolved. Do not stir after it starts to boil. Place lid on pan and boil for a few minutes. This dissolves the sugar on the sides of the pan. Cook to hard ball stage about 2 minutes. Pour over egg whites. Beat until it holds a shape. Pour in greased dish.

Lime Rickey Drink Mix

2 TBS Lime Juice
1 Container of Frozen Grape Juice, concentrate
6 Cups of Water
2 Cups of Sugar or Artificial Sweetener

Pour the water in a sauce pan. Put stove on high. Add the sugar or sweetener, stirring until it dissolves. Add the thawed grape juice, stirring until well blended. Add the Lime Juice and stir. Then put in pitcher and refrigerate for at least 4 hours. To drink, add three tablespoons of mix for every glass of 8 oz. water and stir.

Pineapple Loaf Cake

2 cups Flour
3 TSP Baking Powder
1/4 TSP Baking Soda
3/4 cup Sugar
1 egg
1 small can crushed Pineapple
2 TBSP Butter
1 1/2 cup walnuts

Beat egg in bowl. Add pineapple, melted butter, and dry ingredients. Fold in nuts. Makes 1 loaf. Bake at 325 degrees for 60 minutes.
