Carrot Coconut Cookies

1 cup Shortening
1 cup Mashed Cooked Carrots
2 cups Flour
1/2 tsp Salt
3/4 cup Sugar
2 Eggs
2 tsp Baking Powder
3/4 cup Coconut

Bake at 400 degrees for 10 to 12 minutes.
